Physical and chemical properties:

3.heat &acid-resisting: excellent heat &acid-resisting, won't break down when heated for a long time in the condition of pH3 and 120 °C ,So can be applied to the food that need high temperature and low pH treatment to maintain its characteristics and function not be destroyed.

4. moisture retention: Added to the food, Isomaltooligosaccharide -90 syrup can keep moisture in the food not be evaporated to dryness, have good moisture retention, so can prevent starch food from

5. water activity: Aw=0.75,common bacteria, yeast and mold won't grow in this environment, so Isomaltooligosaccharide -90 syrup has good antiseptic effect.

6. dyeability:  Isomaltooligosaccharide -90 syrup can react with protein or amino acid when heating to produce caramel color due to its reducing group.
